The recipes here, have been made by group members. They are some of our favourites and all contain easily available ingredients. As everyone has varying skill levels, time and resources available to them we hope you can find a recipe on here that sparks your interest and decide to give it a go.



2 1/2  cups sweet potato (cut into cubes )

1 1/2 cups sliced onion

1 1/4 cups dry red lentils

2 Tins chopped tomatoes

2 1/2 cups water

1/4 TSP salt

1/4 TSP each cumin, nutmeg and cinnamon

1/2 TSP paprika ( I use smoked )

1 TSP chilli  ( add more if needed )

2 cloves garlic crushed

  1. put onions, sweet potato and spices in pan cook gently for 3 MINS
  2. put lid on and cook for another 8- 10 MINS
  3. add rest of ingredients
  4. stir and bring to the boil, then put on lid and simmer for 20 MINS
  5. once the sweet potatoes are soft it’s ready

You can adjust the spices if you enjoy a hotter chilli



1  Tin of cooked butter beans

1  Tin of chopped tomatoes

8oz   carrots cubed

1lb  leeks  washed and cut into 1″ slices

4oz  mushrooms sliced

15o mls   vegetable stock

oil  to cook veg

1 tbsp flour

8oz puff pastry   eg  jus rol

  1. Put the oven on to 220c / 425 f
  2. Put the oil in a saucepan add the carrots, put the lid on and cook gently for 10 mins
  3. Add the leeks and mushrooms and cook for another 8 mins
  4. Add the flour mix in, then add tomatoes and stock stir, then cook for 5 mins
  5. once thickened add the beans and any seasoning
  6. Put mixture into pie dish and leave to cool
  7. roll out puff pastry and put on top of mixture, make sure edges are firmly on dish
  8. brush with some melted soya margarine or non dairy milk
  9. cook for 20 mins, then reduce heat to 190c/375f and cook for 15 more mins



1 cup TVP granules

1 cup water

1/2 cup diced onion

1 Tin black beans

3 tbsp peanut butter

1/2 cup flour

3/4 cup BBQ  sauce

1 tbsp garlic powder

  1. Put the TVP granules in a bowl, then boil the water and add it to the bowl leave for 10 mins
  2. Once cool add the garlic powder, onions, beans, peanut butter, flour and BBQ sauce
  3. Mix together well, you may need to use your hands
  4. if the mixture is too dry add a little oil
  5. cover, then leave in the fridge for 25 mins
  6. make into 6-8 burgers, you can bake them for 30 mins at 180c/350f or fry for 4 mins each side.
  7. if you are freezing them, let them cool after cooking then wrap individually in greaseproof paper and put in freezer bags



These are a tasty accompaniment to many dishes, including salads and even  for Breakfast!


50g  Plain Flour

1 tsp Baking powder

125 mls non-dairy milk

1 tin of sweetcorn ( drained) or same amount defrosted

pinch of salt

  1. Put flour, Baking powder and salt in to a bowl and mix
  2. Add the milk small amount at a time making sure you mix well so not to have too many lumps
  3. Add the sweetcorn and mix together
  4. Heat a tbsp vegetable oil in a pan then add a ladle of batter/ or pour batter into a jug and pour in to the pan.
  5. once you see a few bubbles on the fritter flip over, they should take 3/4 mins to cook depending on the size you make them.
